Steak Fajita Salad
Whipped up this little ditty a couple weeks ago. It started out as just a basic idea and morphed into something pretty delicious. I’ve also been using spice paste a lot instead of marinating. Here’s what the salad consisted of.
– Strip Steak that was rubbed with spice paste and grilled.
– Grilled red pepper and onion
– Romaine and Iceberg lettuce
– Grated carrot
– Jeff’s famous Habanero Tomatilo salsa (see below)
– Goat Cheese
– Sour Cream
– Homemade chipotle-lime ranch. (see below)
– Some Tortilla chips
– Cilantro
– Fresh squeeze of lime
– I think that’s it.
Habanero Tomatilo Salsa
4- Vine ripe tomatoes
2- Tomatilos
½ Habanero pepper, seeds removed.
½ Small red onion
1- Garlic Clove
Juice of half a lime
Handful of cilantro
Salt and pepper
(Sometimes I add some pineapple or mango too)
Chop, combine, enjoy.
Chipotle-Lime Ranch
Get ready for this groundbreaking recipe…
Some Ranch dressing
½ teaspoon of adobo sauce
Squeeze of lime
Salt
Boom- Chipotle-Lime Ranch
Love the idea of using a spice paste instead of marinating, much faster. I just read an article about the benefits of spice pastes but I can't remember where. Probably on The Kitchn since I'm still addicted, thanks again Jeff. Also, I have become addicted to Serious Eats, fyi. Goat cheese was an interesting choice for the nachos, are you a fan? I'm not really. But the nachos look excellent and even with goat cheese I would dominate them. Have you thought about roasting your tomatillos, tomatoes, onions, and garlic first? That would be nice..
ReplyDeleteYup that article was on The Kitchn, why do you think I just posted two recipes with spice pastes :) Haven't checked out serious eats. I love goat cheese, if there are any Dewey's in Indy, or any other "gourmet" pizza places that have pizzas with goat cheese, you should get one, that's when I started really diggin goat cheese. Roasting the salsa ingredients sounds great, might even add a pablano or something too if I was gonna do that, prob hit it with immersion blender a couple times too.
