Zucchini and Green Chile Breakfast Casserole
Had a couple buddies come into town this past weekend (Evan, Chavis, and Mark) and decided it would be a good idea to have a pre-made breakfast ready when we all woke up on Saturday morning. I found this recipe on The Kitchn and it was absolutely delicious! I'm thinking about making it on Sunday to have throughout the week for an easy, quick, healthy breakfast. Leeann also whipped up some coffee cake for us to have, very tasty as well. My picture wasn't as pleasing to the eye as I would have liked (still a bit whoozy from the night before), so I attached the picture from the original post on The Kitchn to tempt you further. I have a couple recipes that call for cottage cheese in breakfast casseroles, and I think it adds excellent flavor and texture to the final product. It also allows you to keep the dish healthy because there is no need for cream or heavy milk. I served it with refried black beans (pork lard included please) and flour tortillas! Oh, I also added minced shallot and minced garlic to the recipe and the cheese I used was a Mexican blend.
Ingredients:
10 eggs
1 1/2 cup zucchini (grated, squeezed and drained)
1 cup cottage cheese
1 (4 ounce) can green chilies (drained)
1 cup cheddar cheese (grated)
salt and pepper to taste
Directions:
1. Mix everything in a bowl.
2. Pour the mixture into a greased 8 inch square baking pan.
3. Bake in a preheated 375F oven until the eggs are firmly set and golden brown on top, about 25-35 minutes.
Serve with your favorite salsa!!

What’s up now Urban, back to back posties! Simple, delicious tacos.
Ingredients
Spice paste rubbed chicken breast, grilled and sliced.
Some bacon.
Corn Tortillas
Jeff’s famous Guacamole (see below)
Chopped tomato
Shredded Mozzarella
Cilantro
Squeeze of lime
Procedure
You can figure it out.
Jeff’s famous Guacamole
2- Avocados
1/2 – Small red onion
1- JalapeƱo
1- Clove Garlic
Juice of lime (to taste)
Handful of cilantro
Salt and pepper
A dash of Cumin
Chop, mix to combine, don’t over mix though, or I’ll get ya.
Ps- Urban sucks.
Steak Fajita Salad
Steak Fajita Salad
Whipped up this little ditty a couple weeks ago. It started out as just a basic idea and morphed into something pretty delicious. I’ve also been using spice paste a lot instead of marinating. Here’s what the salad consisted of.
– Strip Steak that was rubbed with spice paste and grilled.
– Grilled red pepper and onion
– Romaine and Iceberg lettuce
– Grated carrot
– Jeff’s famous Habanero Tomatilo salsa (see below)
– Goat Cheese
– Sour Cream
– Homemade chipotle-lime ranch. (see below)
– Some Tortilla chips
– Cilantro
– Fresh squeeze of lime
– I think that’s it.
Habanero Tomatilo Salsa
4- Vine ripe tomatoes
2- Tomatilos
½ Habanero pepper, seeds removed.
½ Small red onion
1- Garlic Clove
Juice of half a lime
Handful of cilantro
Salt and pepper
(Sometimes I add some pineapple or mango too)
Chop, combine, enjoy.
Chipotle-Lime Ranch

½ teaspoon of adobo sauce
Squeeze of lime

THREE INGREDIENT THROWDOWN!!
Recipe:
1) Trader Joe's Tomato Basil Marinara
2) Trader Joe's Frozen Shrimp
3) Trader Joe's Organic Polenta (the kind that is pre-rolled into a log)
Warm the marinara over low heat. Cut slices out of the polenta log. Fry polenta slices with butter in a skillet (preferably cast-iron) over moderate heat. When done frying the polenta, throw in the defrosted shrimp and warm up. Assemble. Lay down the polenta, place shrimp on top of polenta, then top with marinara.
This was delicious and crazy simple. It would make a wonderful appetizer for a dinner party.
"Salmon Balls"
Yes, you read it correctly: Salmon Balls. The correct sushi term for these delicious balls is floating out there on the web somewhere, but I don't really feel like looking for it. Nope, calling them Salmon Balls is good enough for me. As you can tell, Sushi Fridays is in full swing and I made another batch of rolls today. But to add something different I decided to make these easy, pinkish balls. No recipe is really needed. Basically, place a square of Reynolds wrap in your hand, about 5 inches by 5 inches. Place a few slices of your favorite smoked salmon in the middle. Dollop a little wasabi on then place a ball of sushi rice on top. Pull the corners of the Reynolds wrap up and start twisting like a mad man. Eventually, you will have Salmon Balls. They are crazy easy and really tasty!
