Fail
Anyone ever try to make polenta? This is the second time I've tried and I screwed it up both times. Giada told me to get quick cooking polenta, but I couldn't find any anywhere. So I used about 6 cups water for 1 cup polenta, cooked for about 20 mins, then added in about 4 tbls butter and about 3/4 cup parmesan. It was ok, but it definitely did not look all that great, a little too lose. I think next time I'll use a little less water and cook it for about another 10 mins. Any other ideas?

I make polenta all the time. I use it in my shrimp and grits (recipe soon to come) Love the stuff. Alton Brown has a good show about the difference between grits and polenta (basically, not much). Anyway, you're using way to much water. Try it with two or three cups chicken stock (preferable to water) to one cup polenta. Bring the stock to a boil and whisk in polenta gradually. Cook it down to desired consistency. Then whisk in some butter, cream, salt and pepper. That's how I make it.

ReplyDeleteYeah, I got mine from the bulk section at Kroger, just wondering where to get the quick cooking if that's what you were using. How long do you cook yours?
